Koreans made a kimchi traditionally before every winter of each year.
There are many kind of kimchis. You can't believe how delicious they are, especially the kimchi made by a grandmather who is good maker. Good kimchi needs a skill from a long long time ago. That is why kimimchi bought from the market or restaurant cannot be compared to that made at home.
Their tastes are completely different. The recipes for kimchi are different in each place in Korea. Kimchi made from west-south of korea(Jeollanam-do) is the best. All of the west-south of Korea's food are the best. I was born to west south of korea, but my mother is not a good cook..^^
NOTE: In English, "gimchi" is spelled as "kimchi."
NOTE: Cooking usually requires heat. Thus in the case of kimchi, we can use "make" instead.
EX: My grandmother can make very good kimchi.

Thanks for informing me of the varieties of kimchi.
I heard before that there are different kind of kimchi in Korea.
There is even a museum for the various kimchis... ^-^
I have only tasted one kind.
It makes me wonder how theothers taste.
My boyfriend loves kimchi as a side dish.
He says it adds more depth to food. ^-^
